Karen Mount would like to share her Blueberry Biscuit recipe. The biscuits were served at the Wood Library Cafe on August 27. Each cafe month we will post a new recipe. To see all the recipes, click on "Recipes" under Topics in the left sidebar. The next Wood Library Cafe will be held September 24 from 10am to 12pm. We will be collecting food and personal care donations at the cafe for the Food Pantry Drive at Wood Library in partnership with the Canandaigua Churches In Action. The food pantry drive will run from September 8 thru 30.
BLUEBERRY BISCUITS
Combine in medium bowl:
2 cups flour
2 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
Cut into flour mixture with pastry blender or knife 1/3 cup of butter until butter resembles small peas.
Stir in 3/4 cup milk just until blended.
Add 1/2 cup fresh or frozen blueberries, stirring just until combined. On lightly floured work surface pat or roll dough to a 1/2 inch thickness.
Using a 2 1/2 inch round cutter, cut out biscuits, re-patting scraps to cut additional biscuits. Place about 1 inch apart on ungreased cookie sheet.
Bake at 425 degrees for 12-15 minutes until golden.
